Ageing and conversion is a unique nature of Pu-erh tea. Premium Pu-erh teas continue to ferment after their production (post-fermentation). The teas become increasingly aromatic, mellow and smooth, and develop certain characteristic aged Pu-erh aromas such as 'woody',  'date', 'ginseng' and 'Longyan'.

Yunnan Pu-erh teas are made of arbour tea tree leaves, with very different characteristics from the tea leaves harvested tea shrubs.
